Sweet / Lemon Tart
This year we have found many great new producers in areas which we previously have not soured coffees from. Flor del Café is one of these new relationships: owner Maria Eva has a small farm in the mountains of the Intibuca municipal, directly south from Marcala and south-east from Santa Barbara.
High elevations (+1800masl) and cool foggy climates make for much slower ripening periods, perfect for developing high quality acidity in coffees that are cultivated here. Maria Eva is a charismatic older lady who has a strong sense of pride in the coffee she produces. Maria has invested in building a nano-wet mill behind her house, equipped with a hand-operated pulper and single tiled concrete fermentation tank for dry fermentation and washing.
