A small lot from producer Juan Saldarriago and his farm El Encanto located in Hispania, Antioquia. This is a natural processed coffee made up of Caturra, Colombia, and Tabi varieties and grown at between 1380 and 1600 masl. Juan took over his family's farm in 2012 and since then has done much to improve the processing and drying techniques. This natural is dried using a cold air dryer that Juan came up with to help control the humidity of the air while drying and increase the quality of the naturals. With notes of milk chocolate, plum and you can taste it’s working.
