We are proud to feature another wonderful Ethiopian supernatural: this one is from the Masina Washing Station in Guji. For the 2020 harvest, Project Origin has decided to help get roasters closer to the local Ethiopian language by naming the lots in Amharic. Injori (pronounced "inn - jaw - ree") means strawberry. This coffee is part of Project Origin's playful and experimental lots where we get to push fermentation in different directions to explore the region's potential. All supernaturals are prepared with the coffee cherries piled into thick layers on African beds. These conditions create natural anaerobic environments in the center of the pile creating unique flavors and aromatics throughout the drying process, the piles and layers are turned and covered up by plastic sheets for various periods of time during the day, depending on what qualities the experiment is hoping to achieve. Obviously, the goal for this lot was to push the coffee towards a berry - driven focus aromatically and on the palate, which this coffee certainly achieves!
